The project aims to develop an innovative online platform for the management of delicacies and wines from the Algarve and an application for mobile devices to pair food and wines from the Algarve from the online platform. The methodologies used to develop the project are: literature review; focus group; Delphi methodology in real time; development of ontology 101 by Noy and McGuinness; online community management; nutritional, laboratory and sensory analysis; development of web programmes. Within the scope of the Algarve, the project findings will be an inventory of regional recipes and wines with sustainability, nutritional and allergenic information, ontologies for regional dishes and wines, a model of pairings that characterises the region's gastronomic identity, a responsive web platform with a system for managing technical sheets of regional recipes and wines and with a system for managing and analysing food and beverage menus.
